- Put a large hob pan onto a high heat with the oil, add the pork and seal on all sides for 5 mins, remove from the pan and set aside on a plate.
- Add the onion, garlic and red pepper into the pan and juices and soften for 3/4 mins. Add the garlic and stir.
- Add the butter beans and bring to the boil, reduce heat to medium. Add the pesto and stir.
- Return the pork and any resting juices to the pan and let nestle between the beans, but allow the pork to brown by touching the base of the pan.
- Cover with a pan lid and cook for around 15-20 mins turning throughout until it is cooked through. After about 12 mins add the Pak Choi so it still has some bite to it when served.
- Let the pork rest for a few minutes and turn the beans out onto a platter. sit the pork on top and scatter with herbs and feta.
