  3. Get 1 red onion, chopped finely
  4. Take Juice of 1 lemon
  5. Take 3 tbsp extra virgin olive oil
  6. Make ready Sea salt and black pepper

  1. To steam the corn: in a pan with a lid (or two pans depending on whether the cobs will fit), put about 5cm of water. Bring to the boil. Put the cobs in. Cover and steam for about 5 mins. The corn is bright yellow when ready. Let the cobs cool and then cut the kernels off.
  2. Mix the onion and corn in the serving bowl.
  3. Add the oil and lemon juice. Mix together.
  4. Stir the mint through. Season. Enjoy 😋
