  1. On medium heat fry onion, carrots and mixed herbs for 5 minutes. Add habanero chilli. Mince garlic and ginger in mortar and pestle and add to onions and cook till fragrant.
  2. Add slightly blended tomatoes bring to boil and simmer for 15 minutes till the ingredients have married and reduced. Place fish skin side down, cover and simmer for 5-10 minutes depending on thickness of the fillets.
  3. Once cooked, remove from heat, season with salt and pepper, add parsley and serve hot.
