The ingredients needed to make Ghevar:
  1. Make ready Maida/ all purpose flour - 2 cups (or 250 grams)
  2. Prepare Besan/ gram flour - 2 teaspoons
  3. Take Ghee- 1/2 cup (or 120 milliliters)
  4. Take Cold milk - 1/2 cup (or 120 milliliters)
  5. Make ready 500 milliliters Cold water/ thanda pani -
  6. Get 1 teaspoon Lemon juice/ neembu ras -
  7. Prepare Few ice cubes/ barf
  8. Get 2 cups FOR SUGAR SYRUP : -Sugar/ cheeni -
  9. Take 1 cup Water/ pani -
  10. Prepare 1/2 teaspoon Cardamom/ elaichi powder -
  11. Prepare Ghee as required for deep frying
  12. Prepare 2 tablespoons Chopped dry fruits -

Ghevar (Devanagari:घेवर) is a Rajasthani cuisine sweet traditionally associated with the Teej Festival. Besides Rajasthan, it is also famous in the adjoining states of Haryana, Delhi, Gujarat, western Uttar Pradesh, Madhya Pradesh etc. Ghevar (Devanagari:घेवर) is a Rajasthani sweet traditionally associated with the Teej Festival. It is disc-shaped sweet made with all purpose flour and soaked in sugar syrup.

Steps to make Ghevar:
  1. Take a big mixing bowl and add ghee and ice cubes. Beat it for 8-10 minutes or until ghee becomes creamy
  2. Take out ice cubes from the ghee and add maida, besan, cold milk, lemon juice and mix it very well.
  3. Add cold water to it and make a lump free batter out of it.
  4. Heat ghee in a pan on high flame for frying. Put ghevar mould at the center of the pan.
  5. Pour 1 tablespoon of batter in mould. After 30 seconds, add 1 more tablespoon batter and then repeat this process 5 times. Total 6 tablespoons of batter is required for 1 ghevar.
  6. When the ghevar becomes golden in colour, take it out from ghee.
  7. FOR SUGAR SYRUP : In a pan, cook the sugar in one cup of water. When it starts boiling, add cardamom powder and stir well. Boil further till you get a two string consistency.
  8. Pour this sugar syrup on the ghevar and sprinkle dry fruits and rest it for 15 minutes. Ghevar should absorb the syrup
  9. Delicious sweet 'Ghevar' is ready to be served!!
