  1. Make ready 1/2 cup Melted ghee
  2. Take 1 block ice
  3. Get 2 cup all-purpose
  4. Prepare 1/2 cup chilled milk
  5. Prepare 3 cup chilled water
  6. Take 1 tsp lemon juice
  7. Make ready as required Ghee / oil for frying
  8. Prepare For sugar syrup-

Ghevar (Devanagari:घेवर) is a Rajasthani cuisine sweet traditionally associated with the Teej Festival. Besides Rajasthan, it is also famous in the adjoining states of Haryana, Delhi, Gujarat, western Uttar Pradesh, Madhya Pradesh etc. Ghevar (Devanagari:घेवर) is a Rajasthani sweet traditionally associated with the Teej Festival. Steps to make Ghevar:
  1. Take melted ghee in a bowl and add 1 block of ice. Now rub the ghee with ice. Ghee starts to thicken. After 3 minutes it will get creamy. Now turns whitish after 6 minutes. Now remove the ice and add all-purpose flour, crumble and mix well. Do not knead it. Add chilled milk and mix well. Now add chilled water and make batter. Again add 1 cup chilled water and whisk it for 5 minutes, add lemon juice. Again add 1 cup chilled water and whisk smooth.
  2. No take a saucepan and ghee/oil till 3/4th saucepan. Flowing batter (no lumps). Now pour 2 tbsp batter each time. Batter will splatter, again pour batter in batches, pour little by little. Repeat around 10 times. Batter moves to side. pour slowly, leave hole in center, scrape from sides. Fry till golden brown, drain of ghee/oil. Now ghever is ready.
  3. Sugar syrup - take 1 cup sugar in a saucepan, add 1/4 cup water. Dissolve sugar, boil for 5 minutes, check 2 stir consistency. Now sugar syrup is ready.
  4. Take 3 tbsp sugar syrup and put on the ghever. Now garnish with dry fruits and silver vrak (optional).
