- Take Pastry
- Prepare 300 g flower
- Get 150 g butter
- Take 1 tsp salt
- Prepare 1 egg

- Prepare 150 g grated cheese

- Make the pastry. Mix the ingredients (add butter bit by bit). Work it to a dough. Wrap in plastic and let it rest in the fridge. Pre-heat the oven to 200C.
- Bake the bacon until crispy. Mix the eggs, creme fraich and cheese in a bowl. Season with salt, black pepper an thyme. Chop the spring onions.
- Rol out the pastry to 5mm thickness and put it in a greased quiche form. Pierce some holes with a fork in the pastry.
- Put in the bacon (without the fat) and the onions. Put in the egg/cheese/crème fraich mixture.
- Bake 30-35 minutes in the preheated oven.
