- Prepare 250 g flour
- Get 125 g butter

Line the tart shells with a piece of buttered aluminum foil, butter side down, and fill them with dried beans or rice. Before serving, fill the tart shells with the pastry cream.
Instructions to make Strawberry tart ππ:
- Let's start by preparing the dough: Beat the egg yolks and sugar with a whisk. Add water and whisk again.
- Mix with your beautiful fingers the flour, the salt and the butter cut in small cubes. Mix until the butter is 100% absorbed and the mix has a thick sandy feel. Hint: you need to be quick, so that the mix doesn't get to soft.
- Pour in the above mix the yolk mix we prepared in step 1. - Mix well with a spatula and start with your hand to work the dough to form a ball.
- Pre-heat the oven at 180 degrees and start spreading the dough in the mold. Typically, I would use a round one for tarts and quiche (25 cm of diameter), but this time I used what was available at hand! (see main picture).
- Flatten the dough while elevating the border. You can style the border of the the tart by pinching the dough all around. When ready use a fork to press lightly and sporadically over the bottom. Place a backing paper on the dough and dried beans on the paper. Place it in the oven and let it bake for 20-25 minutes.
- Meanwhile, we can prepare the filling: the famous "CrΓ¨me PatissiΓ¨re"! Boil the milk with the vanilla sugar. - Mix well the egg with the sugar and then add the flour. Pour the boiling milk on the mix and… mix well! - Put the mix in a pot and heat again. Turn gently. Remove just after boil.
- Almost done! Spread the cream evenly to fill the bottom of the tart and place nicely the strawberries.
