Instructions to make Dragon Eggs:
- Boil eggs to required texture, I suggest soft / medium, about 6 minutes. Cool in pan of iced or running cold water.Remove shells and set aside.
- Slice each avocado in half, remove stone and scoop a little egg-stra more out to fit the egg. Remove skins using a spoon. Add Black Pepper to taste.
- Cut bacon into strips, or if using streaky, leave whole. Place egg inside the Avocado, join two halves together and wrap in bacon around, then last strip along, the Dragon Egg
- In a shallow pan, fry Dragon Eggs until golden brown all over. Serve and, please, don’t forget to take a photo to put on Cookpad!!
