- Mix the salt with the warm water until the salt is fully dissolved. Add the tablespoons of cold water.
- Next cut the aubergine into reasonably thick slices.
- Place them in a bowl as flat as possible.
- Add the brine mixture. Cover with a plate and weigh it down.
- Leave to soak in the brine for 30 minutes then turn and leave another 30 minutes.
- Heat up the coals or grill.
- Drain the aubergine and pat dry with kitchen roll or a clean tea towel.
