- Heat oil in a pressure pan or cooker, add cumin seeds, red chilli, cloves, cinnamon and peppercorns.When cumin seeds sizzles, add finely chopped onions, ginger, green chillies and curry leaves.
- Saute until onions turn golden brown. Add chopped tomatoes, turmeric powder, chilli powder and coriander powder.
- Cook until tomatoes become soft. Add chopped bottle gourd, mix well so that it is well coated with the masala.
- Add 2 cups of water, salt needed and pressure cook for 2 or 3 whistles.Garnish with coriander leaves and serve hot with roti or parathas.
