- Prepare 2 cups Basmati aged Rice

- Prepare 4 drops rose water
- Prepare 1 drop red food colour
- Make ready 2 tbsp Cooking Oil
- Prepare 1 tbsp ghee
- Make ready 2 tbsp Coriander leaves
Steps to make Awadhi Moti Biryani:
- Rice —–Wash and soak rice for half an hour.Heat 6 cups of water adding the whole spices boil rice till 3/4 done.Strain and cool.
- Koftas—Mash boiled potatoes add grated Paneer, chopped nuts,bread crumbs,,spices and salt.Do not add water.Make small balls coat it with bread crumbs.
- Heat oil and fry the balls till brown. Fry the onion slices and set aside.
- In a bowl whisk the curd and add the rose water, kewra essence,food colour.Mix well.
- Heat oil in a cooker and splutter cumin seeds.Add ginger garlic paste, turmeric powder, slit green chilli and tomato puree.Add all spice pdrs.
- Saute it till aroma comes and oil oozes out.Add the fried kofta balls and fried onions.Add rice.
- Sprinkle the yogurt mixture and tomato puree over rice.Add the remaining onion and chopped coriander.Close the lid of cooker.Keep the flame low.Put it on dum for 15 minutes.
- Open the lid and fluff the rice. Garnish with coriander leaves.Serve hot with Vegetable boondi raita.
