Steps to make Awadhi Mutton Dum Biryani:
- Wash and soak badmati rice for 60 minutes.Slice onion thinly and fry in ghee till golden.Take out half.
- Put mutton in the remaining half onion.Add curd lemon juice,salt,all powdered spices,stir well.Add 3cup water,cover and cook on low-medium flame till mutton is soft.
- Do not dry the gravy,remove from flame.
- Soak saffron in milk and add kewra water.Keep aside.
- Boil 1 litre water in a pan add salt and whole spices.Add badmati rice.Cook 80%,drain and keep aside.
- Put mutton pan on flame.Add half basmati rice to mutton.Add cream,green chillies,some fried rice and pour saffron milk over rice.
- Cover from remaining rice.
- Make a dough from wheat flour,seal the edges of pan,cover and cook on lowest flame for 9-10 minutes.
- Remove lid after 10 minutes.Garnish with fried onion and serve with salad raita.
