- dice the onion and grate the carrot. crush the garlic
- brown off the mince adding half the onion, half the carrot and the stock cube. drain the mince, add the chilli, cayenne, Worcester sauce and paprika. stir and cover keeping on a low heat
- sweat the rest of the onions off and add the rest of the carrot. add the tin tomatoes, basil, sugar and garlic. simmer to reduce
- preheat grill (broiler)
- pour doritos into casserole dish. sprinkle beef over evenly. pour on the tomato sauce and top with lots of cheese. grill until the cheese has melted.
