- Rinse potatoes and place in a medium saucepan. Add water to pan until potatoes are covered by 1 inch. Add about 2 tsp of kosher salt and bring to a boil. Boil for 5 minutes, then turn heat off cover and let sit while making the cabbage.
- Cut sausage into 3 inch pieces.
- Heat a large frying pan over medium high heat, add olive oil. When oil is heated add onions and carrots. Saute for 2-3 minutes until onions are translucent.
- Salt and pepper onions and carrots if desired. I add about 1/4 tsp of salt at this point.
- Add coriander and garlic and saute for 30 seconds to a minute. Add cabbage and saute until it starts to wilt. Add butter, apple cider vinegar, salt and pepper to taste and stir to coat cabbage and carrots.
- Add potatoes and sausage to cabbage, cover and cook for 15 min over med low heat.
- Serve immediately and enjoy!
