- (A) How to make the Porridge:
- Wash the chicken thoroughly. - Wash the rice until the water runs clear.
- Pour 6 cups of water in a large heavy-bottomed pot.
- When it comes to a rolling boil, add the chicken, rice, ginger & garlic along with a teaspoon of salt.
- Cover & let it cook on low heat for about an hour. Stir occasionally.
- After an hour, the meat separates from the bones on it’s own. As you stir, the chicken will shred automatically. Remove the bones.
- You may add a little more water at this stage if you think the Porridge is too thick. The consistency should be medium/not too thick not too runny.
- Serve hot with a dollop of butter & chilli oil. Ah Blissful!
- (B) How to make the Chilli Oil:
- Heat the cooking oil to medium in a small frying pan or wok.
- Add the chilli flakes & broken chilies. Stir.
- Take off the heat as soon as the chilies begin to sizzle.
- Do not let the chilies burn, please. - Let the oil cool down completely. - Store in a clean & dry jar. - Use as required.
- This is quite a versatile condiment. Can be used in Soups, Stir fried meat/veggies, Pasta, etc.
- Note: - - 1. Use short or medium grain Rice. That’s the best for making Congee. - - 2. Use any oil except Sesame oil, Mustard Oil & Olive Oil. (I used Canola Oil).
