There are so many varieties of murukku, the one I am sharing here is a basic, very old and standard recipe that is followed by many South Indian women.

The ingredients needed to make Murukku:
- Get 1/2 cup Urad dal
- Make ready 2.5 cups rice flour (store bought)
- Get 1/4 teaspoon Ajwain seeds
- Take 1/2 teaspoon Sesame Seeds
- Get 1 teaspoon salt
- Make ready 1 tablespoon butter/ghee
- Make ready 2-3 cups water
- Get 750 ml Vegetable Oil / Refined Peanut Oil for deep frying
Butter murukku recipe - also known as benne murukku, benne chakli or venna murukku. Murukku is a deep fried crisp snack made with rice flour and gram flour. These are eaten through out the year and is most commonly made during festivals. Butter murukku is a lighter version of the traditional murukku or chakli.
Steps to make Murukku:
- Dry roast urad dal. Let it cool. Blend into fine flour
- Add rice flour, salt, Ajwain seeds, Sesame seeds and butter/ghee.
- Mix everything well and add water little by little to form a smooth ball. The dough should be smooth and there should not be any cracks in the dough.Form small logs and fill in the murukku press.
- Heat oil until hot. Press the murukku dough from murukku press on a ladle and use the ladle to gently drop the murukku in hot oil. Remove the murukkus from oil once the bubbles in the oil settles down. Store murukkus in an air tight container for up-to 2 to 3 weeks.
These are very light, crunchy and have a nice flavor of butter. Murukku was part of our Sankranti festive food preparations this year. Murukku, also known as Chakli, Murukulu and Jantikalu, is a favorite savory snack in our home. A traditional and classic snack that is crunchy and addictive with a cup of coffee or masala chai. Perfect to serve guests and works great as an after school Indian snack for kids.
