- Leave to cool for a few mins then turn out onto a wire rack and leave to cool completely
- Whisk the cream with a little sugar
- Spread the jam onto one cake and cream on the other
- Carefully place one side on top of the other to create the sandwich
- Dust with a little icing sugar and tuck in!
