  1. Get 1 Kilo mini Fresh Tomatoes
  2. Get 2 Large Onions
  3. Prepare 2 teaspoons minced Garlic

  5. Get 2-3 teaspoons Fresh Basil leaves
  6. Make ready Sprinkle of fresh ground Black Pepper

Instructions to make Tomato Relish:
  1. Dice up Onions small and put into a large pan with the Olive Oil and start to cook, until golden brown and soft. Put jars on to heat in water, bring to the boil, then turn down to simmer until needed.
  2. Slice tomatoes in two or more depending on the size and add to the pot.
  3. Cook slowly, squashing down with a Potato masher. Add the chopped herbs and Garlic.
  4. Continue cooking, (about 5-10 minutes), until mix is soft and cooked through. Add sugar, Check taste and add Pepper if desired!
  5. Use a wide neck funnel to put Relish into heated, drained jars. Leave about 1 centimetre head space and seal with heated lids. Add labels when cooled!
