  3. Take 2 tbsp Butter

  8. Get 4 cup Water, warm
  9. Get 2 tbsp Dried Leek, Shallot & Chive Mixture

  11. Make ready 1 can Corn, drained
  12. Take 5 oz Cream Cheese, softened
  13. Make ready 1 Salt & Pepper, to taste
Steps to make Potato Corn Chowder:
  1. Pan fry bacon reserving 2 tablespoons of fat, chop and set aside
  2. Over medium heat, melt butter and add bacon fat
  3. Sauté onion until translucent; add garlic and cook for 1 minute longer
  4. Wisk in flour to make a rue (it should be the consistency of peanut butter)
  5. Add chicken consummé to water and slowly wisk into rue
  6. Add leek seasoning and stir
  7. Add potatoes and corn; simmer 15 minutes or until potatoes are fork tender
  8. Stir cream cheese until smooth and wisk in until well blended
  9. Add most of the chopped bacon, reserving some for a garnish
  10. Add salt & pepper to taste
  11. Garnish with remaining bacon, green onions and your favorite cheese. Enjoy !
    • 4 cups chicken stock or broth may be substituted in place of water and consummé
    • If don't have / can't find a leek spice mixture you can make your own; just combine equal parts dried onions, chives and parsley
