- Put in over and bake for 35-45 minutes.
Use any kind of cheese, or add extra veggies like chopped bell pepper, mushrooms or zucchini. Add spinach and bacon to the mushrooms and heat throughly. Whisk in eggs, salt and pepper into the half 'n half until well blended. Add the bacon, mushroom and spinach mixture and stir well. An easy sweet potato crust topped with a savory mixture of spinach, bacon, onions, mushrooms and of course eggs!
