Instructions to make Sijha Manda Pitha:
- First soak basmati rice for 6hrs. Then strain it. Let it dry (inside the room, not in direct sunlight) Don't dry it completely. The rice should leave the water only.
- After that make a powder of the soaked & dried rice. Make a coarse powder. Not completely plain at all.
- After that take a big container & add 4cups water, 1/2cup milk. Salt to taste / 1/2tbsp. Then add 2tbsp sugar. 1tbsp ghee / refined oil. After a boil add rice flour. Mix well until it become a dough. Now keep it aside.
- Now hit a pan add 2tbsp water and then add coconut and 1cup sugar… When the sugar started melting and became caramel add chena and take the pan out of hit. And here the filling is done.
- Now take the rice dough in a plate or any big surface. Kneet it till became soft. And then make a ball by adding caramel coconut & chena filling.
- Cook it in steam, just like momos or dumplings. For 40-45 mins.
