- In a bowl put the handvo flour, yogurt and hot water and make batter. Add salt, turmeric, chilli powder, 1 tablespoon oil and baking powder. Let the batter ferment overnight.
- Preheat oven at 180 degrees. - Add grated carrots, zucchini, onion,chilli ginger paste, whole coriander seeds and peanuts in the batter and mix thoroughly.
- In a pan heat 4 tablespoon oil and add mustard seeds, curry leaves and cumin seeds to oil. Let it heat until the mustard seeds crackle. Add oil to the ovenproof tray and add eno to batter and whisk thoroughly and add to the tray and bake for 50 to 60 minutes. Check with prick stick if it doesn’t stick its cooked.
