- Prepare 1 left over bolognaise
- Take 1 half a can of kidney beans
- Prepare 1 half a can of chopped tomatoes
- Take 1 tsp hot chilli powder
- Prepare 1 tsp cajun spice
- Take 1 tbsp full fat natural yogurt
- Get 1 tsp dried mint
- Take 1 feta cheese if desired to crumble on top
A great way to use up turkey leftovers! Slowly add the heated stock, whisking after. A pinch each of ground cumin and ground cinnamon. Season well, cover and chill until needed.
Instructions to make Leftovers chilli and mint yogurt:
- Fry the tomatoes, kidney beans, chilli powder and Cajun spices for a few minutes.
- Add your left over bolognaise and stir in. Bring to the boil then simmer for 5 minutes.
- In another bowl stir the mint into the yogurt.
- Serve chilli on rice, add mint yogurt to the side and crumble feta cheese over the top for extra yumminess
Place the chickpeas, cumin, breadcrumbs, egg, coriander, red chilli and spring onions in a food processor and. Combine yogurt, chile, lemon zest, and lemon juice in a medium bowl; season with kosher salt. Scatter mint, sesame seeds, and sea salt over; drizzle with oil.
