The ingredients needed to make Ghevar:
- Make ready 1/2 cup ghee
- Make ready 3-4 ice cubes
- Make ready 11/2 cup maida/ all purpose flour

- Get 11/2 cup sugar
- Take 1 cup water
- Take 1 tbsp cardamoms powder/ elachi powder

Ghevar (Devanagari:ą¤ą„वर) is a Rajasthani cuisine sweet traditionally associated with the Teej Festival. Besides Rajasthan, it is also famous in the adjoining states of Haryana, Delhi, Gujarat, western Uttar Pradesh, Madhya Pradesh etc. Ghevar (Devanagari:ą¤ą„वर) is a Rajasthani sweet traditionally associated with the Teej Festival. Instructions to make Ghevar:
- In mixing bowl add ghee and ice cubes. Mix with spoon vigorously till ghee turns creamy white mixture. Remove ice cubes.
- Add seived maida in batches,mix well to make crumble like mixture.
- Add chilled milk and mix well. Add and mix little little chilled water to make thin pouring consistency batter. Keep mixing for few minutes so all ingredients get incorporated. Keep in cool place.
- To make sugar syrup..in vessel add sugar and water. Heat it on medium flame, stirring constantly to make one string syrup consistency. Add cardamom powder and off the flame.
- Take thick flat bottom vessel. Pour ghee in it,.fill upto 3/4 th fying pan. Heat on high flame. As it get heated, pour 2 tbsp of prepared batter,in continuing thread, at a time in center of hot ghee keeping little distance from hot oil. As forth subside, again pour 2 tbsp of prepared batter. Do this process for 8-10 times, making hole in center with knife. Fry on medium flame till crispy golden. Scrap the sides gently with knife to loosen up Ghevar from frying pan. Strain and take out careful.
- Place prepared Ghevar on plate. Pour 2-3 laddleful of prepared sugar syrup on it. Garnish with dried rose petals, almond & pistachio flakes. Serve/Relish Delicious Ghevar delicacy.
