  1. Cook the rice till fully done but not mushy
  2. Heat a pan with oil on a medium to low flame. When it turns hot, add peanuts/ cashews. Fry until half done. Add chana dal and urad dal. Fry until the dals turn golden.
  3. Add mustard & allow to crackle. Next add ginger (Optional), chillies and curry leaves. Add asafoetida(hing) and turmeric.
  4. Optional :soften the roasted dals. Pour 1 to 2 tbsp water into it the hot seasoning. It will evaporate very quickly and soften the dal.
  5. Mix everything well along with the dals. Keep the rice covered for 20 to 25 mins.
  6. Serve lemon rice with plain yogurt, papad,pickle or coconut chutney.
