The ingredients needed to make Spinach and Ricotta Bake:
  1. Prepare 400 g spinach roughy chopped
  2. Prepare 1 tsp lemon zest

  6. Take 1 cup mozzarella cheese grated

  1. Preheat oven to 190 degrees. In a separate bowl mix eggs and crumbed ricotta. In a separate bowl mix spinach, thyme and lemon zest.
  2. Add the ricotta mix to the spinach mix, I did with my hands, it was easier. Place in the greased oven proof dish and bake for 20 minutes uncovered till crispy and a bit charred.
  3. Once a bit charred(I love the flavour it brings) add mozzarella and bake for further 10 minutes. Serve hot, alone or with preferred meat.
