It also goes by the name kolyvozoumi but I've found that kolyvozoumi recipes often include tahini which this recipe does not. And as I mentioned already, you can it enjoy this yummy dish all year round. "Tachinopita" or "aleipsopita" or "aleipsia" (tahini pie) is a Lenten dessert made on Clean Monday."Starozoumo", a soup dessert, is made of wheat, tahini, raisins, sugar, cumin, cloves.
Starozoumo or kolyvozoumi is one of the most favored of recent trending meals on earth. It is easy, it’s quick, it tastes yummy. It’s appreciated by millions every day. They’re nice and they look wonderful. Starozoumo or kolyvozoumi is something that I’ve loved my entire life.

- Make ready 250 g wheat berries
- Make ready 1 1/2 cup flour, browned either in a non stick skillet or a baking tray in the oven
- Take 1 cup tahini
- Prepare 1 tsp roasted cumin
- Make ready 1 1/2-2 cups sugar (depending on how sweet you prefer it)
- Get 1 cup walnuts, finely cut
- Get 1 cup roasted almonds, finely cut
- Take 1/2 cup roasted sesame seeds
- Get 1/2 cup raisins
- Prepare 1 pomegranate
- Prepare Cinnamon for sprinkling
Steps to make Starozoumo or kolyvozoumi:
- Boil the wheat berries from the previous night and next day strain it, measure 10 cups of the stock and put it in a pot.
- Blend half of the boiled wheat berries in the food processor so that you get a gruel and add it to the stock.
- Dissolve the flour slowly adding the cold stock to it, little by little, so that it doesn't curdle and then add it to the pot as well.
- Add the sugar and stir constantly over low heat until it thickens and becomes a light pudding (if it thickens too much add a bit of water).
- Remove from the fire and add the raisins and the cumin.
- Put the tahini in a deep pot and slowly add cold water to it (about 1 1/2 cup) and stir it to make a thin cream, then add the pudding little by little so that tempers and doesn't curdle, then add that to the rest of the pudding and stir vigorously.
- Boil the pudding for a couple of minutes stirring constantly.
- Mix the walnuts, almonds and the sesame seeds.
- Serve in bowls and sprinke the nuts mix, the pomegranate seeds and cinnamon on top, in the shape of a cross.
