- In a mixing bowl add all the diced vegetables and green peas and sweet corn.
- Add crushed black pepper and salt.Mix well.
- In a separate bowl beat eggs and add to the vegetables.
- Also add oats.
- Mix well to combine.
- Take 4 ramekin bowls and grease with little oil. You can also use any microwave safe bowls or cups.
- Fill 2/3rd of each bowls with the egg mixture.
- Add chopped coriander leaves and chilli flakes.
- Microwave them for 3 minutes or till done.
- Take out from microwave and delicious mould them as they cool a bit.
- Enjoy this delicious filling Souffle as breakfast or snack.
